- Complies with all portions sizes, quality standards, department rules, policies and procedures.
- Consistently maintains standards of quality, cost, eye appeal and flavor of foods.
- Creates new recipes.
- Sets up training session with all employees.
- Conducts staff meetings.
- Tastes all food items prepared prior to serving.
- Creates Specials.
- Creates new items for buffet and a al carte.
- Plans weekly production lists.
- Ensures all employees are following their schedules.
- Communicates with the Chef on any club member feedback.
- Ensures that all cooks are trained and understand our standards when working any type of station.
- Ensures that all employees are following highest sanitation standards.
- Ensures that all storage areas are maintained, clean , and organized.
- Ensure that the receiving department is accepting on ly the highest quality of food products.
- Make the staff schedule.
- Ensure that all areas are safe and secure; report any unsafe conditions to your supervisor.
- Prepares garnishes for pastries and other desserts.
- Prepares chocolate and other candies.
- Assists in the preparation of rolls and muffins.
- Plans production for pastry department according to menu or special requirements.
- Supplies recipes for and suggests methods and procedures to pastry workers.
- Fashions table and pastry decorations, such as statuaries and ornaments, from sugar paste and icings.
- Requisition supplies and equipment.
- Maintain production records.
- Participates in preparing desserts.
- Supervises and directs the functions of the Assistant Pastry Chef.
- Carries out supervisory responsibility in accordance with the Clubs policies and procedures.
- All other duties as assigned.
- Culinary degree preferred
- Strong interpersonal and management skills
- Excellent communication skills
- Prior experience in a high-volume, high-quality hotel/club and/or high-end restaurant environment
- Degree in culinary and/or equivalent combination of education and experience
- Minimum of 5 years prior experience in pastry preparation
- Arts training program is desirable.
- Salary is commensurate with experience.

Position Summary:
Supervises and coordinates activities of cooks engaged in preparation of desserts, fillings, tarts, decorated cakes, fancy cookies, confections and chocolate pieces for a la carte dining, buffets and banquet.
